For a 16 cm mold

100 g ladyfingers

To soak the ladyfingers:

50 g water

100 g lime and orange juice

20 g strawberry powder

20 g sugar

Pour everything into a saucepan, bring to the boil then let cool.

For the cream:

250 g mascarpone

170 g cold whole cream

50 g caster sugar

Whip the cold whipping cream until stiff peaks form, starting at minimum speed and gradually increasing to maximum. Add the mascarpone and powdered sugar. As soon as the cream becomes smooth, stop and use immediately. Mascarpone is very picky, you need to be careful not to overwhip it, otherwise the cream will become liquid.
